Chicken & Potato Ghee Roast Recipe by Shweta Chandan

Today I have Shweta Chandan who had a special Chicken and Potato Ghee Roast Dish recipe made in Ghee, which not only makes it healthy & tasty to eat but full of nutrition as well.

Chicken and Potatoes Ghee Roast Recipe

Ingredients You Would Need 1. 500 gms chicken 2. 1 tbsp grated ginger 3. 1 large lemon 4. 1 tbsp ginger garlic paste 5. 1-2 tbsp ghee (clarified butter) 6. 2-3 green chillies cut length-wise 7. 1 medium sized potato cut into large square pieces 8. 1 tsp jeera/cumin seeds 9. 1 tsp dried coriander powder 10. 1/2 tsp haldi 11. 1 tsp garam masala 12. A pinch of asafoetida (Hing) / Optional 13. Salt to taste 14. Coriander leaves for garnishing

Marinade 1. Wash the chicken thoroughly and let it dry 2. Prick the chicken gently with a fork all over the pieces 3. In a large bowl, squeeze the lemon 4. Add a pinch of salt and the ginger garlic paste 5. Mix the chicken well with all the ingredients, cover with foil and let it sit for atleast 3/4 hours (overnight is best) 6. If the weather is hot, marinate the chicken and keep in the fridge till ready to use

In this modern era of several so called low fat, no fat, diet products, ghee has lost its glory. In-spite of being a saturated fat, ghee has shown to reduce both serum and intestinal cholesterol by triggering secretion of billiard lipids.



Dish:

In a pan, heat the ghee till it melts. Lower the flame and then add the jeera/cumin seeds and let them splutter.

Add the Ginger and stir. Then add the Potatoes and Green Chillies and mix. Cover and cook for 5 mins

Then add the haldi, coriander powder and asafoetida (Hing) and stir. After about a minute, add the chicken, garam masala and salt

Mix all the ingredients well, then cover and cook till the chicken is done (about 5-7 mins) Do keep stirring in between.


Garnish with coriander leaves and serve hot with chapatis.
