Yes, you read it right! You can easily make those soft fluffy Pancakes at home without using Eggs. This is a great breakfast recipe and charges you up with benefits of Banana (A Great SuperFood) and can easily be made in 15-20 minutes.
You can use Whole Wheat (Normal Atta) or add All Purpose Flour (Maida).
Topping used here is a very commonly found summer fruit - Mango. You can add Banana cuts, Berries, Dark Chocolate Chips, whatever suits your taste.
Recipe Below Will Make 6 Medium Sized Fluffy Pancakes
INGREDIENTS YOU NEED (1 CUP = 240ML )
1 cup flour (All Purpose Flour (Maida) or whole wheat flour (Normal Atta) or ½ & ½)
1 ½ tsp baking powder
2 tsps sugar
2 pinches salt
1/8 tsp cinnamon powder
1 tsp vanilla essence
1 banana large ripe
1 tsp Cooking Oil
1 cup Toned Milk
Oil for cooking Pancakes
Mango Diced
Honey to Taste
PREPARATION (5 Minutes)
Mix Together flour, baking powder and salt and keep it on rest for awhile
Take the Ripe Banana and mash it up nicely with a fork. Add Powdered Sugar and Cinnamon Powder and mix it well
Add 1tsp Oil, Vanilla Essence and 1 Cup Milk to the Mashed Banana Mix and Whisk it well
Now add the the resting flour in batches to the Banana mash and keep giving it a Whisk till all lumps are gone till you are left with a consistent thick yet flowy batter. Don't give it a hard whisk
MAKING THE PANCAKE (5 Minutes)
Heat a Non Stick Pan or a Tawa
Grease it with a few drops of oil
Once the Pan is Hot, Pour some batter and DO NOT Spread. Let it take its own shape
Add a few drops of oil to the edges and onto the top side
Once the edges rise, flip the pancake to cook the other side
Once both side are cooked, take it off and put batter for the next one
GARNISHING (30 Seconds)
Add Diced Mango (in my recipe) along with little drizzle of Honey (Optional).
You can add a lot of variety to it like topping it with Chocolate Chips, Maple Syrup, Cut Bananas, Strawberries, Blueberries or any citrus seasonal fruit you may want.
